We laminate by hand, three days at a time. Croissants pull apart in honeyed sheets. Almond cream is folded fresh each morning. Tarts change with what's growing nearby — rhubarb in spring, stone fruit in July, quince by November.

Our story

A bakery built around time.

Nouve began in a home oven in 2019 — one loaf, then a dozen, then a line down the street. Today our shop sits on Massachusetts Avenue, a few doors from the Battle Green, with a wood-floor dining room and a window onto the bakers at work.
